Instant Mango Pickle :

The first thing that comes to mind when I think of the month March is Mango. In TamilNadu, March is the season where people start to make home made pickles, vadaams (frymes) and preserve it for rest of the year. There are so many various ways of preparing a mango pickle. Few must-have ingredients like Gingelly Oil/Sesame Oil, Fenugreek seeds elevates the taste of pickle and hence can’t be susbstituted with other things. The quantity of spice can be adjusted according to your tase and preference. You can serve this pickle as an accompaniment to Upma, Kichdi,Rice etc. Curd Rice and Mango pickle are match made in heaven and I can assure you that this is one of the best comfort foods during Summer season.

This instant version stays good for upto 5-6 days. For a longer shelf life, make sure to use dry storage bottles without any traces of moisture. While serving the pickles use fresh dry spoon. Moisture can create fungus in them. The following measurement yields around 250gms of pickle.

Ingredients :

1 Raw Mango
2 Tablespoon Gingelly Oil
2 Tablespoon Chilli Powder
1 Tablespoon Mustard seeds
1 Tablespoon Fenugreek/Methi Seeds
1 Tablespoon Salt
1/2 Teaspoon Turmeric Powder
1/2 Teaspoon Asafoetida/Hing
Few curry leaves

Preparation :

1.In a frying pan, dry roast fenugreek seeds and grind them to a fine powder. Keep it aside
2.Chop raw mango into small pieces and place them in a bowl
3.Add 1/2 tbsp salt in the bowl and mix well. Let the mangoes sit untouched for about 15 minutes
4.Heat Gingelly oil in the frying pan
5.Add mustard seeds, curry leaves. Let them splutter
6.Add chilli powder, turmeric powder, hing and saute for 2 minutes
7.At this stage add the salted mangoes to the pan. Simmer the flame
8.Let the mango pieces be coated evenly with spice mixture
9.After around 5 minutes, sprinkle fenugreek powder
1o.Turn off the flame and mix everything well using a spatula
11.Instant spicy Mango pickle is now ready to be served
