#FBAIDialogues 2016

#FBAI Dialogues, the FBAI’s annual showcase food and drink conference that addresses trends, learnings, and innovations in the food, drink and hospitality industry was held on Sunday 04 December 2016 at Enigma at JW Marriott Juhu, Mumbai.
The #FBAIDialogues are intended to bring together food bloggers, restaurateurs, chefs, experts and other industry stakeholders to engage one another on key trending topics that best define the country’s modern food, beverage and hospitality scene.

FBAI Dialogues, Mumbai’s only leading and premier food conference now in its 3rd. successful year, consisted of a series of Panel discussions and solo Master Perspectives covering the current, relevant and compelling trends in the food & dining landscape from Stalwarts in the Industry.

Moderated Panels comprised of  stalwarts and luminaries from various functional areas of the food, drink, hospitality & dining industry.

The 2016 edition of the #FBAIDialogues included the following

The conference kicked off with Sameer Malkani, co founder of the FBAI addressing the conferenece and opening the same followed by an interesting Video of Vikhroli Cucina Season 2, a talk by Amarja Sharma of California Walnuts and a warm welcome by Executive Chef Himanshu Taneja of JW Marriott Juhu, Mumbai.

The first Panel Discussion – “The journey towards becoming an informed and ethical food blogger” chaired by Bhisham Mansukhani and featuring Executive Chef Ashish Bhasin of Trident BKC, Antoine Lewis an eminint food writer, Nikhil Merchant, a gourmand and a blogger, Rushina Munshaw- Ghildiyal India’s first food blogger and Kalyan Karmakar.- India’s renowned food blogger.

The Master Perspectives included talks by  Restaurateur and Chef Rahul Akerkar (The next chapter in the Indian restaurant business),Chef Ajay Chopra (Evolution of a Chef – persistence, innovation, creativity), Chef Varun Inamdar, (The Chocolate Story- innovations, palate, cooking),  Saransh Goila, (Creating a niche out of India’s Famous Dish),

Nitin Tandon (food photography and food styling), Chef Ranveer Brar (Cultural Responsibility and the Food Ecosystem), Rushina Munshaw Ghildiyal (My affair with Indian Ingredients), Kunal Vijayakar, (The 5 big Indian food trends in 2017), Chef Vicky Ratnani (5 big International food trends in 2017),  Nikhila Palat (Successfully managing food brands & personalities), Master of WInes Sonal Holland (3 key trends in wine that Impact the Hospitality Industry) and Sweta Mohanty of Aspri spirits (Global Cocktail Trends)

Another panel  “The Rise of the Weekend Chef po.by Vikhroli Cucina” Chaired by Antoine Lewis and featuring Mohit Khattar (Godrej Industries), Ashwin Suresh (Pocket Aces) and Gitika Saikia (Home Chef)

The last panel discussion was on  “Baking Trends 2017” chaired by Pooja Khanna featuring Chef Sanjana Patel (La Folie), Irfan Pabaney (The Sassy Spoon) , Himanshu Taneja (Executive Chef JW Marriott Juhu)  Anees Khan (Star Anise) and Neha Sethi (Sweetish House Mafia).

#FBAIDialogues happened at JW Marriott on 4th Dec 2016, it was a day long conference from morning till evening inclusive of lunch and hi tea with fabulous food by JW Marriott Juhu

 

The Dialogues were presented by VikhroliCusinaSeason 3, Godrej Group, JW Marriott Juhu Mumbai, co presented by California Walnuts India and our partners Jet Airways (Travel Partner), Aspri Spirits (Beverage Partner)  and  Soulflower (gifting and aromatizing partner),
