What’s the first look a dessert lover gives when you tell them about an eggless dessert?

They will obviously tell you a big no no on it.

We attended a class of the Eggless French Macaron last week at Cocoa Cottage, Andheri West.The egg whites were replaced with Aquabafa while making the Eggless Desserts.


What is a Macaron?
Macaron is a sweet meringue-based confection made with egg white/Aquabafa, icing sugar,granulated sugar, almond powder or ground almond and food coloring.

What is the difference between Macaron and Macaroon?
The sandwich-like French macaron is more of a meringue cookie, getting its light, airy texture from a combination of almond flour and egg whites that have been gently folded together. The Southern coconut macaroon, on the other hand, is a hearty lump of sweetness made of shredded coconut and condensed milk.


It was an intensive theory and hands on workshop where students got to learn the art of mastering the craft of the most finicky cookie by the Chef herself Ruhee Bhimani.

Chef Ruhee Bhimani interned with Grand Hyatt Mumbai and after her stint with Hyatt, she had the opportunity to work under the tutelage of renowned Master Pastry Chefs and Master Chocolatiers in Dubai, New Zealand, Turkey and Paris.


There were the 4 types of Macarons that were taught:
1}Bubble Gum
2}Blackcurrant Rose
3}Mango Passion

All in all it was a wonderful experience to be a part of the workshop and learn something new.
